In a blender, combine roasted baby beets (we used candy cane baby beets), greek yogurt, and lime juice. Blend until smooth.
In a cocktail shaker, combine one tablespoon of blended beet mixture, Tahoe Blue Vodka, orange liqueur, and ice. Shake until chilled.
Taste before serving. If needing a touch more sweetness, add in simple syrup to your liking.
Double strain into final glass filled with ice.
Garnish with a baby beet slice and a sprig of thyme.
